Raw Veggie Salad

This recipe uses fat-free ranch dressing, but you could use any low-fat, low-sodium dressings of your choice. Note the nutrition facts panel (on the right) shows red for sodium, this is because the dressing had a very high amount of sodium in it, sodium can be very sneaky, make sure you check the labels and get dressings with low sodium levels!

Use the table to keep track of your daily intake of calories, nutrients and vitamins and ensure you check the serving size on the panel to compare.

Ingredients:Raw Veggie Salad Nutrition Fact
¼ cup     Broccoli
¼ cup     Cucumber raw
¼ cup     Celery raw
¼ cup     Pepper, sweet, red, raw
¼ cup     Lettuce iceberg, raw
¼ cup     Carrots raw
2 tbsp     Salad dressing, ranch dressing, fat free
1 tsp       Salt
1 tsp       Black pepper

Serving: 3

Method:
In a large bowl cut and mix broccoli, cucumber, celery, peppers, lettuce and carrots. (Tomatoes – optional)
Add and toss together with 2 tbsp salad dressing, salt and pepper.
